The ultimate grab and go breakfast, these make ahead vegetarian freezer breakfast sandwiches have enough protein and a half servings of vegetables to keep you going through your morning.
I didn’t used to have a thing for breakfast sandwiches.
It was just eggs on bread and I didn’t quite get the appeal.
Then, I read how Julie from Peanut Butter Fingers put jelly on her breakfast sandwiches and it sounded like the perfect mix of sweet and savory.
Suddenly, breakfast sandwiches were all I could think about. I would order them when we went out for breakfast, make eggs in the microwave to through one together before work, and added them to all three of my pre-baby freezer meal cooking lists.

I thought mixing a couple eggs in a ramekin and putting it in the microwave was genius for those busy mornings when I needed breakfast on the go.
That is until I learned you can bake eggs in a sheet pan, assemble the sandwiches ahead of time, and freeze them. When you are ready for one, you nuke it for all of two minutes before you are out the door with deliciousness in hand.

These breakfast sandwiches are the ultimate on the go meal.
The reason they made it to my pre baby freezer meal list with all three kids is because they are easy to eat one handed and I could not burn them if the baby needed me.
Its one handed capabilities is the same reason they were one of my go to breakfasts for the morning commute to work. I would also opt for smoothies or chia pudding.

Substitutions
You can easily customize these make ahead vegetarian freezer breakfast sandwiches to your tastes and to what you have on hand.
Add different vegetables. I used chopped spinach and mushrooms in mine, but you can use bell peppers, onions, zucchini, or broccoli. Either way you are starting your day with a partial serving of vegetables.

Add meat. A slice of ham, turkey, or bacon is a quick and easy addition. I opted to keep mine vegetarian as a personal preference.
Change the bread. I have only tried these with English Muffins and as a burrito, but you can easily sub in your favorite bread like a bagel. Just be sure that type of bread freezes well.
Let your kids help! I am always looking for ways to get the kids to help in the kitchen (they love it) and this is a good recipe for that. The kids can mix the eggs, add the salt and pepper, push down the toaster, spread the jam, and top the egg circles with a slice of cheese and the English muffin top.

How To Freeze and Reheat
Once you have cooked your eggs and assembled your sandwiches, lay them on a cookie sheet and put it in the freezer. Once frozen, individually wrap each one in plastic wrap or tin foil. Store all of the wrapped breakfast sandwiches in one plastic bag.
When you are ready to dive into the one-handed bliss of these breakfast sandwiches, simply unwrap a sandwich and put in the microwave for 2-3 minutes. Wrap it in a paper towel to protect your hands and off you go.
You can store these in the freezer for up to three months.

Make Ahead Vegetarian Freezer Breakfast Sandwiches
Ingredients
- 12 eggs
- 1 cup Mushrooms, chopped
- 1 cup Spinach, chopped
- 12 English Muffins
- 12 slices cheddar cheese
- Avocado Oil Spray
- Strawberry jam to taste
- Salt and Pepper to taste
Directions
- Preheat oven to 350 degrees.
- Mix eggs and salt and pepper until smooth.
- Spray sheet pan wit avocado oil spray.
- Pour eggs into sheet pan.
- Top eggs with mushrooms and spinach.
- Bake for 15-20 minutes, or until eggs have set.
- While baking, toast English Muffins and spread one side with jam.
- Let eggs cool, then cut into circles with a cup.
- Place one egg circle and one slice of cheese on each English Muffin.
- Top with other half of English Muffin.
- Freeze for later or eat them right away.
