Well, not really across the country, but about 900 miles Northeast of Colorado to Minnesota.

Rob and I have been talking about making this move for over a year (ever since we knew William was on the way), and finally made the definitive decision to do it in March. The pull of being closer to family to help us with the kids and for Zoey and William to get to know one side of their grandparents, aunts, uncles, and cousins better was too strong to avoid.

Sure, we are only three weeks in, but we are sincerely loving being near family, exploring the area, and actually getting to live near water for the first time in 11 years. Since Rob and I both grew up near water (him rivers and lakes, me oceans and bays), we have truly missed it.

Out of the 20 days we have been here, we have been swimming in bodies of water at least seven times.

My favorite season used to be fall in my cross country running heyday, but about three years ago (when Zoey arrived), it quickly turned to summer.

The loose schedules, uninterrupted time with the kids, the long light days, and constantly seeking out water so we can live in swimsuits has me smitten. Now that we are actually living near water for the summer months (one of the reasons we wanted to move in June), that smitten feeling is full on love.

The kids have been doing so well with the move. Yes, there are a few more tantrums and some serious mom cling, but overall, Zoey has been adaptable and excited, and William just seems happy to be anywhere (especially in the water). Now that we are in a rental home for a few months while we house hunt, we have been able to get back to a bit of our normal routine, which has been so good for both kids. Nap schedules are king these days!

Whether it is a slow summer morning playing with the kids outside in their pajamas, a tantrum-filled sunrise where my hands are too busy to eat, or a fast morning heading out the door for work at 6:30am during the school year, this Easy Make Ahead Chia Pudding For On The Go Breakfast has been a quick breakfast rescue since last June.

Loaded with protein, healthy carbohydrates, good fats, and plenty of antioxidants, chia pudding has come in handy too many days to count. It is super simple to meal prep two or three days ahead and makes the excuse of “no time for breakfast” go out the window.

My summer go to breakfast is usually a Blueberry Smoothie, but since there is no high powered blender in our rental house and I have no idea which box our Blendtec is packed in, I am turning more to the Chia Pudding to fill me up and fuel me for the morning hours.

There are tons of variations you can use as well. While I have used both sweetened and unsweetened Almond Milk, I have friends who prefer orange juice or cow milk. Other toppings you can add include:

  • Any fruit: Raspberries, Blackberries, Kiwi, Bananas, Cherries, Peaches, Pomegranate
  • Other nuts: Pecans, Cashews,
  • Agave
  • Chocolate chips or cocoa nibs
  • Shredded coconut
  • Cinnamon

Just find the combination you like and go with it! You could also blend the fruit and mix it to your chia if you want a more smooth texture.

I find it easy to eat out of a mason jar when driving to work, or playing with the kids, but it is not a requirement. You can easily make it in a storage container you have on hand. Also, you can certainly buy slivered almonds to put in your chia pudding, but we eat full ones by the handful, so I just use the Slap Chop (which Zoey loves helping with) to chop a bunch ahead of time. I just store them in a Rubbermaid in the pantry.
