I don’t know about you, but this Monday has been go go go! I feel like I haven’t stopped moving since 6 am!

sitting on the couch enjoying a glass of bubbly is just what I needed. (More on that later this week.)

Anyway, I would rather be busy than bored, so enough complaining. On to an easy breakfast that will fuel you solidly through those busy morning days.

Fruit and Granola Breakfast Roll Up

Seriously. This doesn’t get easier.

Ingredients:

  • 1 whole wheat tortilla
  • 3 tablespoons Nut Butter (I like chunky)
  • handful of berries, or sliced fruit, of choice
  • handful of granola (bonus points if it’s homemade)

Directions:

1. Layer the tortilla with nut butter, granola, and berries.

2. Roll up and enjoy!
