I don’t know about you, but this Monday has been go go go! I feel like I haven’t stopped moving since 6 am!
Between my students coming in for help, (yes I know I caught her putting on makeup)
and getting through my to do list, (blurred for safety)
sitting on the couch enjoying a glass of bubbly is just what I needed. (More on that later this week.)
Anyway, I would rather be busy than bored, so enough complaining. On to an easy breakfast that will fuel you solidly through those busy morning days.
Fruit and Granola Breakfast Roll Up
Seriously. This doesn’t get easier.
Ingredients:
- 1 whole wheat tortilla
- 3 tablespoons Nut Butter (I like chunky)
- handful of berries, or sliced fruit, of choice
- handful of granola (bonus points if it’s homemade)
Directions:
1. Layer the tortilla with nut butter, granola, and berries.
2. Roll up and enjoy!
Tasty, filling, comes together in no time; what’s not to love?

I used to do granola wraps all the time and they are awesome. I’ve forgotten about them-thanks for the reminder. I understand about rather being busy than bored. I was bored all day yesterday and I was in a miserable mood at the end of the day. I think as runners, we thrive on adrenaline!
