On to a delicious, clean-eating snack I literally devour anytime I make them:
Banana Oat Muffins
These muffins, original recipe from Fit and Healthy with Debbie, have been on my Pinterest board for quite some time and I finally made them a few months ago. My only regret is not making them sooner!
They are healthy, guilt-free, and I can’t help but eat 2-3 at a time. The oats fill me up, the bananas help with workout recovery, and the chocolate chips add a bit of decadence. What’s not to love?
I didn’t oil my muffin tin, which is why mine came out a bit mushed around the edges. They still taste amazing!
Ingredients:
- 2.5 cups Oats
- 1 cup Greek Yogurt
- 2 Bananas
- 2 Eggs
- 1/2 cup Honey
- 2 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- 1 teaspoon Vanilla
- Optional add ins: chocolate chips, walnuts, raisins, dried cranberries, coconut
Directions:
- Grind oats into flour in a food processor.
- Add all other ingredients and process until they all blend together. (I used chocolate chips!)
- Scoop into greased muffin tins.
- Bake at 350 degrees for 20-25 minutes until golden brown, or until a toothpick comes out clean.
- Let cool and enjoy!

These look good – I think I might eat oats like this!!
do you think these could be made without the bananas? (my husband can’t have bananas) or do you think that’s a key part of the binding for them?
You might be able to substitute the banana for applesauce. I haven’t tried it, but if you do, let me know how it turns out.
