Banana Oat Muffins

These muffins, original recipe from Fit and Healthy with Debbie, have been on my Pinterest board for quite some time and I finally made them a few months ago. My only regret is not making them sooner!

They are healthy, guilt-free, and I can’t help but eat 2-3 at a time. The oats fill me up, the bananas help with workout recovery, and the chocolate chips add a bit of decadence. What’s not to love?

Banana Oat Muffins

I didn’t oil my muffin tin, which is why mine came out a bit mushed around the edges. They still taste amazing!

Ingredients:

  • 2.5 cups Oats
  • 1 cup Greek Yogurt
  • 2 Bananas
  • 2 Eggs
  • 1/2 cup Honey
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Vanilla
  • Optional add ins: chocolate chips, walnuts, raisins, dried cranberries, coconut

Directions:

  1. Grind oats into flour in a food processor.
  2. Add all other ingredients and process until they all blend together. (I used chocolate chips!)
  3. Scoop into greased muffin tins.
  4. Bake at 350 degrees for 20-25 minutes until golden brown, or until a toothpick comes out clean.
  5. Let cool and enjoy!
