This Creamy Apple Carrot Noodle Breakfast Stir Fry has a comforting creaminess to wake up to with a hint of sweet that is always welcomed in the mornings. Quick and easy to make, this dish is high in protein for an excellent option when you are tired of the same old eggs and toast.

Last week I stood in front of the fridge trying hard to come up with something interesting to eat for breakfast.
With the colder weather, smoothies do not seem as tasty. The usual eggs and fruit option felt boring. Cereal and berries are not my thing unless I’m pregnant. I was out of granola. None of my go to options sounded good.
Instead, I fried up a Creamy Apple Carrot Noodle Breakfast Stir Fry that had me dreaming about cashew cream, Japanese noodles, and crisp, sweet apples.
Anything with Japanese noodles always brings back fond memories of the two weeks Rob and I spent traveling around Japan on one of our vacations during our year teaching and living in Vietnam. It was sushi and noodles every day all day and I loved every minute of it. Rob and I still regularly talk about our time in Japan and the delicious eats we had there.
With protein being a main focus of a morning meal, this Creamy Apple Carrot Noodle Breakfast Stir Fry offers up 25 grams of protein to start your day. No more relying on eggs or protein powders to hit your protein goals.
This recipe does take a bit of prep work in having some cashew cream ready to go. However, you can easily make a batch and store it in the fridge for up to a week so it is ready for you.
For this recipe, use a basic cashew cream by soaking 1 cup of cashews for 1-10 hours (longer is better). Add drained cashews and a half cup of water to a high powered blender (I love my Blendtec!). Blend and add more water as needed until cashews are at desired creaminess.
You can store your cashew cream in an airtight container for up to a week in the fridge. I literally use it on everything from salads to pastas to Mexican-inspired dishes like this Vegetarian Southwest Quinoa Dinner Dip to enchiladas. It is so versatile!
Ditch the usual breakfast options and go for this creamy, sweet, noodles-for-breakfast option.

Creamy Apple Carrot Noodle Breakfast Stir Fry
Ingredients
- 1 package Yakisoba Stir-Fry Noodles
- 2 tbsp water, plus more as needed
- 1 large carrot
- 2 dates, pitted and chopped
- 1/4 cup slivered almonds
- 1/4 cup cashew cream
- 1 medium apple, shredded*
- 1 tsp lemon juice* *Add lemon juice to your shredded apple right after you shred it and toss to coat.
- 1/2 avocado, cubed
Instructions
- Puncture holes in one package of Yakisoba Stir-Fry Noodles and microwave for 1 minute.
- Heat 2 tablespoons of water on medium heat in a fry pan.
- Add shredded carrots to fry pan and saute until just soft, about 3-4 minutes.
- Add more water as needed.
- Add chopped dates and slivered almonds to carrots and heat 2-3 minutes.
- Add Yakisoba Stir-Fry Noodles to fry pan and cook until just warm, about 2-3 minutes.
- Add Yakisoba Stir-Fry Noodles seasoning packet and ½ cup cashew cream to fry pan and toss all together until coated.
- Heat until warm.
- Remove stir fry from heat and transfer to a bowl.
- Toss stir fry with shredded apples.
- Top with cubed avocado.
- Serve warm.
