These easy broccoli bites are a family favorite completely customizable to your tastes and what you have on hand. Serve as the main dish, use as an appetizer, or serve them as a side. Versatile and tasty!

My kids are strange.
They love broccoli.
They love it so much, they will gobble their portion super fast and then ask for more. Covered in cheese or not.
Of course, we have to call the broccoli “trees” and state what type of animal flew, ran, or crawled out of the “tree” when they eat it, but hey. They are eating broccoli.
You would think adding cheese to broccoli and baking it would take this broccoli love to the next level and put the kids completely in awe and over-the-top excited about eating more broccoli.
However, while our adventurous Zoey gobbled it up, our more bland-palated William (except for barbecue sauce and pickles) refused to touch them.
Broccoli bites are not a completely new dish around here as I have tested out making them before. Adding in some Sam’s Fresh Salsa took them from being just cheesy broccoli tasting to being completely full of flavor and especially tasty with a dollop of Greek yogurt.
Pair these Easy Cheesy Salsa Broccoli Bites with some thin cut red potato french fries, a colorful salad, or even pair them with some grilled chicken and you have yourself a tasty treat that not only covers your vegetable servings, but can act as a decent protein boost to a plant-based meal.
Substitutions
These broccoli bites are super simple to make and are very customizable. While this particular recipe includes mushrooms, you can replace it for other vegetable ingredients.
- bell peppers
- onions
- roasted zucchini
- shredded carrots
- finely chopped spinach
Whatever you choose as your “add in”, make sure to finally chop it (especially if you are trying to hide the vegetable your children do not want to eat).
I enjoy topping my broccoli bites with some plain Greek yogurt. You could also opt to eat them plain, or top with some guacamole. Either way, you cannot go wrong with the flavor that Sam’s Fresh Salsa adds to these bites.
Plant-Based Pairings
For a side dish with these Easy Cheesy Broccoli Bites, I enjoy serving a fresh side salad and some roasted potatoes (the oven is already on as is). You could also serve it with:
- cole slaw
- snacking vegetables with hummus
- rice
- pesto pasta
- corn
- caprese
- apple slices

Easy Cheesy Salsa Broccoli Bites
Ingredients
- 4 cups broccoli cut into small pieces
- 1 cup shredded Colby Jack cheese
- 1 cup Baby Bella mushrooms cut into small pieces
- salt and pepper to taste
- 1/2 cup Sam's Fresh Salsa
- 2 eggs
- 1/2 cup Panko breadcrumbs
Instructions
- Steam broccoli until just soft, about 5 minutes.
- Preheat oven to 400 degrees Fahrenheit.
- Combine steamed broccoli, cheese, chopped mushrooms, salt and pepper, Sam's Fresh Salsa, eggs, and breadcrumbs to a large bowl.
- Mix all of the ingredients until well combined.
- Roll about 1 tablespoon of the broccoli mix into a ball and place on a silpat-lined baking sheet. Bites will not change shape as they cook. Continue until the mix is gone.
- Bake broccoli bites at 400 degrees for 25-30 minutes, or until bottoms are just browned and bites hold together when tipped up with a fork.
- Serve warm.
