I have been trying to get Rob to eat more vegetarian meals for years.

I have been slowly sneaking them into our weekly meal plans. Gently adding a second day of the week to the usual Meatless Monday theme.

When Rob suggested we eat vegetarian for a full month, my jaw just about hit the floor.

As I giddily started researching more meatless meal ideas apart from our beloved Vegetarian Southwest Quinoa Dinner Dip, Rob suggested cauliflower buffalo wings. This is a dish we have both always wanted to try, but never had a reason to make.

The first night we made them, we both feel immediately in love and quickly consumed an entire Costco-sized bag of breaded and buffalo wing sauce tossed cauliflower florets.

Now add these spicy bites of joy to a crispy egg roll with some broccoli and carrot slaw, and you have a game day appetizer that is sure to score big.

What are the best egg roll wrappers to use for this appetizer?

The Twin Dragon Asian Egg Roll Wrappers are not only delicious, but they hold up extremely well to the sauce in this recipe. They are simple to wrap, do not fall part, and get nice and crispy.

Twin Dragon Asian Egg Roll Wrappers are also non-GMO, vegan, and have no artificial preservatives. This wrappers boast a low oil absorption which means they do not get greasy when made with sauces.

What other dips pair well with these game day appetizers?

A few alternatives to the honey yogurt dipping sauce (which I am currently putting on everything) are:

Ranch Dressing. This is how Rob ate his egg rolls, with just ranch to dip.

Blue Cheese. A blue cheese dip always works well with wing sauce. Make sure it is on the lighter side so as not to weigh down your egg rolls.

Honey Mustard. This might be too much spice with the mustard and the buffalo wing sauce already on the cauliflower, but the sweetness of the honey would make it rather tasty.

What else can I serve with egg rolls for a game day appetizer?

While these Cauliflower Buffalo Wing Mini Egg Rolls are vegetarian, you can include some heavier meats in other game day appetizers. I also opt for minimal utensils on game day.

Sweet & Sour Meatballs. Keep toothpicks near by so people can grab and go.

Vegetable Tray including cucumbers, carrots, peppers, and cherry tomatoes.

Fruit on a Skewer. In keeping with game day traditions, putting anything on a stick, or readily available for a toothpick, is a win. Kids love anything on a skewer, so keep an eye on these before they all disappear.

Mini Sandwiches. There is something so fun and game day festive about mini sandwiches. Some good bread, small slices of cheese, and a piece of turkey or ham is delicious.

Cheetos. This is a family tradition between my father and I that there are always Cheetos on game day.
