Every time we make tuna salad for dinner, Rob and I both always question why we do not eat it more often.


There are usually three reasons we opt for this husband approved tuna salad recipe:

It’s hot outside. This is consistently one of our go to summer meals.

We have no kitchen. Our kitchen remodel took about four weeks as Rob and his dad did all the work themselves. We ate this tuna salad at least three times during that month.

We are low on groceries. Having some tuna cans in the pantry makes this an easy pantry meal to choose when you need to go grocery shopping but have not made it there yet.

With Rob’s love of mayo and my preference to mustard, it has taken us some trial and error to come up with a husband approved tuna salad recipe that we both enjoy.

The kids really enjoy tuna salad as well. While they do not like sandwiches, they do prefer their tuna salad on crackers with a sprinkle of cheese and sliced tomatoes like eyes placed on top.

I feel ridiculously fortunate that our four and two year old will actually eat tuna salad. I remember loving it as a kid as well, but that does not seem to be the norm.

Side Dishes

You have some other choices for sides if you want to skip the tradition chip route.

Cut Vegetables – Carrots, cucumbers, and peppers all work well as a side to your sandwich. Yes, there is celery, cucumber, and pepper in the tuna salad, you can still serve them up to boost your vegetable servings even further.

Fruit – Always a win over here, but honestly something we avoid at dinner, fruit can add more color to your plate. If your kids are anything like them, that will be the first item they devour.

Salad – You could serve your tuna salad on some lettuce greens and just make it a salad, or you could add one to the side of your sandwich. Keep it simple with lettuce greens, tomatoes, peppers, and some red onion.

How To Serve Tuna Salad

Sandwich – The traditional sandwich route is by far my favorite. Toast some bread, spread a bit of mustard of mayo on the bread, top with tuna salad, lettuce, and cheese.

Lettuce Wraps or Boats – While dealing with Gestational Diabetes, my bread consumption was minimal to none. Lettuce wraps or boats were the winner to serve my tuna salad.

Crackers – Our kids love eating their tuna salad on crackers and actually prefer it to sandwiches.

As a Salad – You could just top some lettuce greens with tuna salad and take to it with a fork. I usually do that with leftovers from my sandwich. Easy way to keep things low carb and gluten free if you eat that way.

I adore these mixing bowls with lids. You can mix up your tuna salad in them and then simply lid the leftovers for the fridge. No need to dirty another dish!

Husband Approved Chop & Mix Tuna Salad

Serves 8

Ingredients

  • 4 cans tuna, drained
  • 1 bell pepper, chopped into small pieces
  • 1/4 red onion, chopped into small pieces
  • 1/2 cucumber, chopped into small pieces
  • 3/4 – 1 cup Mayonnaise according to taste
  • 2 tablespoons – 1/4 cup stone ground mustard according to taste
  • 2 tablespoons Kirkland No Salt Seasoning
  • Optional: 1/4 cup sliced grapes
  • Choice of serving methods: Sandwiches, sliced cheese, lettuce, tomatoes, crackers, tortillas

Directions

  1. Mash tuna into pieces with a fork in a large bowl.
  2. Mix together with bell pepper, red onion, cucumber, mayonnaise, stone ground mustard, no salt seasoning, and grapes if using.
  3. Serve using method of choice (sandwich, salad, cracker, tortilla).
