Pizza is my achilles heel. I am not huge on chocolate. I could leave baked goods. Ice cream is delicious, but I do not salivate over it. Pizza, on the other hand, leaves me a drooling mess.


Chalk it up to my Italian roots. Or the fact that pizza is just pasta in a different form. Or that my two favorite foods are bread and cheese. Whatever it is, if someone says pizza, I say where?

Rob and I usually have pizza once a week, either on Friday or Saturday night. The debate always comes in on where to get it from. On our cheaper weeks, we do Little Caesars. I actually do not think it is that bad and the crust is rather flavorful. On our super cheap weeks, we pick up grocery store freezer aisle pizzas. Hello thin crust Digiorno Supreme. When we want to splurge, we either hit of Papa Murphy’s or this delicious Brooklyn style pizza called MC’s Pizzeria. The owner is from Brooklyn and I always volunteer to pick it up just to listen to his accent and feel a little nostalgic.

A few weeks ago, instead of pizza, we opted for a Prosecco and cheese night to celebrate my new teaching job. We like to peruse the $5 cheese bins at our grocery store and try different things with our good French bread. This particular night, we had picked up some blue cheese.

You guys. Blue cheese (or at least this particular kind) is not good on a cracker. It was too strong to just eat straight like that, so most of it got left on the cheese board.

The frugal in me could not let that cheese go to waste, so I popped open a leftover pizza crust roll (I made these guys a while back), sautéed some thin apple slices, crushed some walnuts and hoped that it would not turn into a hot square of garbage. (Serious points if you can name that TV show.)

Voila! This Blue Cheese, Apple, Walnut Pizza came about.

Rob was completely skeptical, as he is with most of my crazy kitchen creation ideas (hello pancakes with no eggs, milk, bananas, or baking powder), but he enjoyed this take on our beloved traditional pizza. I always use Rob as a measure of recipe failure or success. If he will eat it, or exclaim with surprise that it is good (ahem, cauliflower rice), then I know I have a win.

Zoey, on the other hand, did not enjoy her reheated version the next night, but I am going to blame that one on serious teething. Which, if you have been following me on Instagram, know that it has been a rough few weeks. Thankfully, she seems back to her normal self! Until the next 5 decide to pop through all at the same time.

With the success of this homemade Blue Cheese, Apple, Walnut Pizza, I cannot stop thinking about all the other fun toppings for make-at-home pizza. I have done cauliflower pizza – meh, I have done traditional make-at-home versions, but I want to think more creatively. I mean really, can I go wrong with trying different types of the food I adore? I do not think so.
