It’s been a blissfully mellow weekend full of bad TV, sleeping in, and reading. Tomorrow, things get real as I am headed on a work trip with about half my school’s staff, our principals, and superintendent. Yikes!
Apart from that, the hot summer weather is in full swing and I have been having a smoothie pretty much daily. Especially after a hot run, it just seems to hit the spot.
This is what goes into my go to blueberry smoothie:
Ingredients
-1/2 cup Greek yogurt
-2 cups spinach or kale
-1/2 cup blueberries (fresh or frozen)
-1 carrot
-1/4 zucchini
-1 tablespoon chia seeds
-splash of water or almond milk
-scoop of protein powder
Directions
-Put all ingredients into a high powered blender and blend until desired consistency.
Simple, but absolutely delicious!

I like smoothies if they don’t have milk or yogurt (juice is fine) – I don’t care for dairy much (except some cheese!!).

I love fresh berry smoothies! I had to travel last year with my office and it was certainly unnerving. But then we had a Christmas office party and it was all better after that 🙂

I have to say that I really don’t like the taste of spinach, so I was hoping you can’t really taste it in this smoothie? I guess I could always leave it out!
You can’t taste the spinach at all! The berries help sweeten everything up, so you don’t even know it’s there.
