Rob and I rarely eat out.

Partly because we like being home. Partly because we want to save money. Partly because we can make food just as fueling as what we would get in a restaurant.


We used to average eating out twice a week, with one of those nights being cheap take out Chinese or pizza while we watched the Amazing Race. Now, with Zoey, we eat out even less (if at all) during a typical week. We are at the point with Zoey’s eating skills where we need to leave big tips because of the mess she makes. I do not even want to know what kind of tip the Busby family leaves.

It was during one of these rare restaurant nights about two years ago when I ordered some mahi mahi tacos. This was also during the time where we had cable and spent about 90% of our TV time watching the Food Network, so I felt all fancy and like I could cook anything as long as I “elevated the flavors”. When my food arrived I was shocked at how simple the dish looked. Literally a few flour tortillas with some grilled mahi mahi stuffed inside and topped with a bit of red cabbage. It was delicious. Simple and delicious. There was some sort of sauce drizzled over the tacos, but my tastes are not advanced enough to know what it was. Nothing a little sour cream and avocado can’t replace.

I looked at Rob and told him I could make this. That it would be a step up from our typical lazy night meal of straight chips and salsa with the occasional bit of ground turkey and taco seasoning thrown in. After all, we were already regularly buying Mahi Mahi from Costco.

Challenge accepted.

It took two attempts to perfect our now staple rotation of Mahi Mahi Wraps. The mangos I added about year ago because 1) they were on sale, and 2) Rob could not get enough of the mango and peach salsa from Costco. Have I mentioned that we love Costco?

These Mahi Mahi Wraps with Mango come together easily, faster if you have good knife skills, and take very little “watch” time. Honestly, throw them on the grill and chop some vegetables. The longest part of the whole process is physically loading your wrap with all the goodness. Even longer? Trying to get your wrap to close.
