Happy hump day friends! I hope your week is treating you well so far. Rob celebrated his birthday on Monday, so we spent the day doing fun activities like mini golf, a walk, monopoly, dinner at Breckenridge Brewery, and Dairy Queen. It was a fun, relaxing day.

I’m doubling up again today on a workout and a recipe. You can’t lose when activity and food are involved in my book.

The ladies in the Summer Burn are really enjoying the Tuesday/Thursday cardio workouts that typically focus on plyometrics, so I wanted to share a similar one with you all.

Plyometric cardio workouts are some of my favorites when I want to get my heart rate up, but don’t want to sit on a cardio machine or go for a run. They’re a nice change of pace for a high calorie burn.

If your knees are a bit more sensitive, you can still get your heart rate up by leaving off the jumping in these moves. If balance is an issue, rest your hand on a wall or chair. As always, do what feels right to your body.

Please make sure you warm up before doing any workout, whether you jog or walk for 5-10 minutes or try this full body warm up.

Now for some food! I’m all about the 20 minutes or less dinner making, and with work starting back up, I want to spend as little time as possible preparing dinner.

This Super Easy Chicken Bake honestly requires you to just throw a bunch of vegetables in a pan, coat it lightly with your oil of choice (I highly recommend this Avocado Oil), season it, and then throw it in the over at 400 degrees for 15-20 minutes, or until the chicken is cooked through.

And that, my friends, is the entire recipe. Served over some quick rice and you’re good to go! It’s a great dish to throw together when you’re trying to empty out the fridge.
