It was a super exciting day at Sport Authority. They had tables and tables packed with Bronco Champion gear. I have never seen the place so packed!
Rob and I were on a mission to buy bike helmets. The general, run-of-the-mill helmets just don’t look good on anyone. We tried our best to spruce them up.
I’ve posted before about my love of meal prep. If you follow me on Instagram, then you definitely know about it. I am a firm believer that spending one afternoon to prep your meals and snacks make for a seriously healthy and successful week.
With the weekend being all about bike buying and football watching, I postponed food prep to today. With school being out, it worked out well, but meant Sunday night was lazy since I hadn’t made anything. (Thank you Panda Express for the pre-made meal.)
Here are this week’s creations:
- Almond Joy Energy Bites
- Minestrone Soup – More pasta than veggies, my bad. (There are 3 other containers of this)
- Corn for Avocado, Feta, Corn Salad snacks
- Garden Pasta for lunch
- Cucumbers for munching and hummus
- Vietnamese Spring Rolls
- Overnight Oats
Also, for those of you asked, here is what last week brought:
- Sweet Potato Fries (for dinner that night)
- Chocolate-Nut Melts
- Crunchy Edamame and Chickpeas (Great on salads!)
- Fruit, PB, Strawberry Roll Ups for breakfast
- Cucumbers for munching with hummus (a weekly staple)
- Spinach Balls (though I ran out of patience to ball them and just blobbed them)
- Yogurt Covered Blueberries that were frozen
- Quinoa, Veggie Salad (great with fresh tomatoes, dash of feta, and some salad dressing)
I am in dire need of more tupperware. I don’t have enough for everything I make and portion out!

I don’t food prep. I do have tupperware (all the same because I’m sort of anal) that we use for leftovers and Chris uses it to take his lunch to work.
Whoa that’s awesome! I do breakfast and lunch prep – 20 mins and I can have all my overnight oats and salads in a jar done! For those I obviously just use Mason jars. For leftovers through the week I have a million leftover My Fit Food containers that are perfect for me and portion control!
That works out so well! Portion control is one of my biggest issues as well. I just really enjoy food!
You go girl! I honestly wouldn’t have the patience to meal prep. When I was teaching I did prepare my lunch the night before and it was very helpful. I was also aware of what to pack in my lunch because our school day was 7:30 to 2pm but I usually ended up being there until 5pm. I would bring a “pick me up” snack aka something healthy so I wouldn’t eat all the chocolate and candy in sight! 🙂
My husband loves tupperware but I think glassware would be better. I feel it is cleaner than tupperware sometimes!
Glass feels cleaner to me also. A lot of teachers at my school eat the school lunch, which just looks a little gross to me.
