For some reason, this week just seemed to drag. It must be from getting back into the swing of things after two weeks off for the holidays. Needless to say, I am seriously looking forward to a three day weekend.
Last week, I bought a pomegranate on my Sunday shopping trip. Pomegranates just tickle me pink for some reason. They are so unique in taste, I love the deep red color of the skin and seeds, and they are delicious topped on a yogurt bowl.
Bad part about them? They make a serious mess.
I learned a few years ago how to extract the seeds of a pomegranate without everything ending up murder-scene red (how’d you like that visual?).
Here’s how I do it:
1. Slowly slice the pomegranate into large chunks. (This may stain a cutting board, so put down a paper towel or two.)
2. Fill a bowl with warm water and invert the pomegranate, much like you do when cutting up a mango.
3. Keep the pomegranate submerged and pop out the seeds nestled in the pith. If you lift it out the water to pop them out, they break more easily and you risk getting sprayed with red juice.
4. The pith floats while the seeds sink, so it’s easy to separate.
5. Drain the water and store the pomegranate seeds in the fridge.
6. Enjoy your stain-free shirt!

I’m excited that we have a 3-day weekend. I do like pomegranates but rarely buy them because I’m lazy!!
They are definitely a rare fruit for me because of that exact reason.
I have never had a pomegranate!!!! Maybe I should try one this year!
