Much to my husband’s head-shaking, if there is a way to add more vegetables to something, I am going to find it.
It is very common for me to take some of our tried and true favorite meals and make them vegetarian or load them up with more vegetables than the recipe actually calls for.
Nowadays, I rarely make a meal without at least two different kinds of vegetables included, if not more. Between the added color, flavor, fiber, and all those good-for-you vitamins and nutrients, I can’t help but load up my meals with as many vegetables as possible.
That’s why this Vegan 5 Layer Party Dip is right up my ally. Full of vegetables, quick to make, and so insanely delicious that I was making single-serving portions of it all through the week. It also didn’t leave me feeling overfull like so many dips tend to do.

Recipe Notes
The mix of salty cashew cream, sweet corn, creamy hummus, and protein packed Big Mountain Foods Lion’s Mane Mushroom Crumble makes this dip an all around win. With these ingredients, it is easy to make this Vegan 5 Layer Party Dip for a crowd.
I hit the easy button on the ingredients for this dip and used a pre-made guacamole, but you can certainly make your own or just use mashed avocados. I also used pre-made hummus, but if you have a homemade hummus recipe you love, use it!

The only ingredient in this recipe that takes a bit of legwork is the cashew cream. To make cashew cream, soak 1 cup of cashews in 2 cups of warm water for 1-10 hours. Add drained and rinsed cashews plus a half cup of water to a high powered blender like a Blendtec. Blend and add more water as needed until cashews are at desired creaminess. Add salt and pepper to taste.
Since you can store your cashew cream in an airtight container for up to a week in the fridge, you can certainly make the cashew cream portion of this dip ahead. I like cashew cream on just about everything that calls for sour cream from enchiladas to Vegetarian Southwest Quinoa Dinner Dip.

The sweet corn in this recipe adds that bit of sweetness that makes this dip a salty and sweet combo lover’s dream. I had a whole bunch of frozen corn on hand that we processed this summer when corn was in season.

Vegan 5 Layer Party Dip
Ingredients
- 1/2 cup hummus
- 1 1/4 cup Big Mountain Foods Lion's Mane Mushroom Crumble
- 1/2 cup sweet corn, cooked
- 1/2 cup guacamole or mashed avocado
- 1/2 cup cashew cream
- 4 cups tortilla chips
Instructions
- Cook Big Mountain Foods Lion's Mane Mushroom Crumble according to package directions.
- Layer your serving dish with hummus, 1 cup of Big Mountain Foods Lion's Mane Mushroom Crumble, sweet corn, avocado, and then cashew cream.
- Sprinkle the top with the remaining 1/4 cup of Big Mountain Foods Lion's Mane Mushroom Crumble.
- Serve warm with tortilla chips.
