With the pressure of finals looming large for my students, it has been a bit of a stressful week as they realize how much work they have makeup. It certainly makes for emotionally heightened students and lots of running around trying to get them what they need so they can take work home, get questions answered, and move forward with the rest of the learning for the year.

On a positive note, William started clapping this week! Rob and I have been working with him on this skill, but I think the clincher was when we gave him two plastic Easter eggs to bang together. He was the happiest 10 month old on the block for at least ten minutes. Now, he is clapping up a storm and loving it, especially when we all giggle at him.

If you have been following me on Instagram, you know that I am on a mission to clean up my diet. Rob and I eat pretty well, but I have been slowly finding myself increasing the amount of snacking I have been doing on empty calorie snacks like crackers, chips, and candy more often than I should. Since those foods do not make me feel my best anyway, it has been time to say goodbye.


The other motivation to be more conscious of what I am eating during snack times is with my attention on building more muscle and increasing protein, those salty bites of crackers and chips do absolutely nothing productive for my muscle goals. Instead, snacks like nuts, seeds, hummus, apples, vegetable sticks, and RXBars are much more productive foods to eat.

In my mission to eat more whole foods during snack times and not fall victim to any vegetable snacking monotony, these Vegan Blueberry Bites are ideal. Natural foods, a bit of sweetness, easy to make, and something I can feel good about giving to both my toddler and infant when they see me grab one, because let’s be real, if mom is eating something, they want to eat it too.



I tend to go on cooking sprees the same way other women go on shopping sprees. I want to make all the things all at once (as demonstrated by the mass amount of pre-baby freezer meals I made before both Zoey and William were born). These Vegan Blueberry Bites were part of one of those sprees. I was actually planning to make my Almond Joy Energy Bites and freeze them (because they are heavenly when they are cold), but a lack of dates and a Costco-sized amount of raisins sitting in the pantry forced me to get a little creative.

What developed was a chewy, satisfying, natural foods bite that I had a problem taking pictures of before Zoey and I ate them all. She was my little assistant while William slept and kept stealing blueberries off the layout. I am sure she ate more than her fair share while we giggled and I pretended to swat her hand away before she snagged one and ran off.



Making these ahead as a part of your meal prep plans means you can have Vegan Blueberry Bites in your fridge all week (if they last that long), so you can just grab and go. When you form them, chose a size that works well for you. I preferred the two bite size, but might go with one bite when I make them again since I can just pop it and get back to holding a baby, doing a dish, or any other two-handed activity required. Plus, Zoey is on an anything-small-is-the-best-thing-ever kick right now and she would love the miniature versions of these.
