A Quinoa Lunch Bowl is the perfect packed lunch option. Full of protein, fiber, and whatever vegetables you have in the fridge, it’s an easy meal to throw together.
Ok, ok. Get your squishy tomatoes ready to throw. I have a Health Coach confession to make.
I do not regularly eat quinoa. (Ducking from your throws.) In fact, I have only made it one other time in my life and it did not turn out well. Until now.
I am finally on the quinoa bandwagon. Apologetically late, but at least I made it. And now I might be addicted. At least to this Quinoa Lunch Bowl, also known as the first (of two) recipe I have made with quinoa that actually worked and that I enjoyed.
What I love about this dish, other than that it is super colorful, is it is a perfect fridge clean out meal. You can add pretty much any veggies kicking around in your fridge at the end of the week. Since we always have peppers, onions, and cucumbers on hand, it only took a bit of chopping to throw together. Plus a shake or two (or three) of feta.
You could easily customize your ingredients to include items you have on hand. Need to use up some chicken? Toss it in! Have a bit of broccoli leftover? Steam it quick and add it! Looking for something to do with that rogue onion? Give it a quick sauté and mix it up! That is utter joy and creativity of a Quinoa Lunch Bowl.
I found it to be sweet enough even without a dressing, but a touch of Italian dressing worked well for me to give my version of the Quinoa Lunch Bowl a bit more flavor and prevent it from being too dry. Even Rob, who was super skeptical of the whole thing, because in his words it, “looks too healthy,” exclaimed with serious, wide-eyed surprise on his taste test, “That is good.”
