Happy Hump Day!

I was fully expecting this week to drag since it is right after a break, but I am happily surprised that it is moving at a nice, normal pace. Hopefully your week is feeling similar!


If you have some holiday parties, cookie exchanges, and the like coming up over the next few weeks, consider making these Mixed Nut Turtles! Can’t you just picture them in a mason jar with a holiday ribbon?

Since I am all about easy baking with minimal ingredients, these turtles are right up my alley. They come together in about 30 minutes or less, depending on fast you work.

Mixed Nut Turtles

As a heads up, the caramel will harden in the fridge, which makes them easier to bite. But if you like the chewiness of caramel, keep them out, they just will be harder to sink your teeth through.

Use dark chocolate to make a little more waist-line friendly!

Mixed Nut Turtles

Ingredients:

  • 35 bite-sized Caramels
  • 1 cup Chocolate Chips
  • Few handfuls Mixed Nuts

Directions:

1. Line a cookie sheet with parchment paper.

2. Place nuts in small bundles on the cookie sheet.

3. Melt caramel in a microwave safe bowl. Start with 30 seconds, mix, and then heat at 15 second increments as needed.

4. Drizzle caramel over nut clusters. Work fast as the caramel hardens quickly!

5. Melt chocolate chips in the same way you did caramel.

6. Drizzle chocolate over the top of the caramel.

7. Place cookie sheet in fridge until chocolate hardens.

Then, try and keep your hands off them!
