A few posts back, I posted a picture of a side dish that has started to become a regular in my house. Since a number of you asked for the recipe, I figured it was high time to share it!
Cauliflower Tots
This is a mostly healthy recipe that doesn’t take all that long to put together. It’s a bit sticky when rolling into balls, but totally worth it. If cauliflower is on sale, pick it up and try this!
The original recipe came from Skinny Taste. The only change I made was to add a few more seasonings as cauliflower tends to be a bit bland.
- 2 cups Cauliflower, cooked
- 1 Egg
- 1 Egg White
- ½ cup Onion, minced
- 3 tablespoons minced fresh Parsley
- ½ cup Cheddar Cheese, grated
- ½ cup seasoned Breadcrumbs
- Salt & Pepper to Taste
- Steam cauliflower about 4-5 minutes.

Finely chop and set aside.

Mix all ingredients together in a bowl and season with salt and pepper.

Spoon about 1 tablespoon of mixture in your hands and roll into small balls or ovals.
- Place on a parchment paper lined baking sheet and bake at 400 degrees for 18-20 minutes. Turn tots halfway through cooking until golden. (Cook longer if you want them crispier.)
