My cold really did a number on me. I ended up taking Friday off work because I couldn’t keep my eyes open and slept the day away. Now I have a bit of lingering cough that has turned out to be bronchitis. Fun.
Also fun? The Asia-inspired mask they asked me wear the entire time I was at the doctor’s office. Kind of like being back in Vietnam.
Side note: First time I’ve written this on an official form. That was weird, but awesome.
I’ve got some drugs now, so all should be well shortly. For now, let’s talk about apple pie!
Since Rob and I went camping for Thanksgiving, we missed out on turkey day desserts. To remedy that situation, I made some mini apple pies a few weeks ago.
They turned out pretty tasty, and satisfied my current obsession with mini foods. Is anyone else going through that phase? Plus, they took barely any time at all to throw together.
Ingredients
- 2 apples (peeled, cored, and sliced into mini chunks)
- 1 pear (sliced and diced)
- 2 tablespoons lemon juice
- 3 tablespoons sugar
- 3 tablespoons brown sugar (there may have been a bit more sugar; I didn’t measure)
- cinnamon to taste
- 1 egg, beaten
Directions
1. Mix the apples, pears, sugar, lemon juice, and cinnamon until the apples are covered with a fine layer.
2. Cookie cut pre-made pie crust.
3. Lay on a cookie sheet covered with parchment.
4. Load the bottom square with the pie filling.
5. Cookie cut the second pie crust.
6. Play top cuts over pie filling.
7. Pinch down edges.
8. Put small ventilation hole in top of pies and brush with beat egg.
9. Serve warm. Store leftovers in airtight container in fridge.
Pie craving demolished!
