Oh brussel sprouts. You poor, unfortunate vegetable. Hated by children and many adults everywhere. Admittedly, I used to be part of that crowd. Never picking them up at the grocery store. Never thinking recipes that use them look good. Never meeting a brussel sprout recipe that I actually liked.

Until now.

My main theory is that if you put enough cheese on anything it will taste good. In the case of brussel sprouts, it’s syrup. That half full bottle you have in your fridge right now can be put to good use, potentially even converting children to wanting a second helping of this oh-so-neglected vegetable. Syrup for dinner? Sounds like a win-win.

Maple Bacon Brussel Sprouts

I am usually that person who brings a somewhat healthy dish to parties and potlucks. My go to is green beans almondine, but last Thanksgiving I was in search of something different. Something green, of course, but a way to break out of my norm.

Rob suggested brussel sprouts and I turned up my nose. How could I possibly make those taste good? Then he said the word bacon.

The version we made for Thanksgiving got great reviews, but it had a few more ingredients than this simple, quick version does. I am convinced this take will get rave reviews.

Next time those strange looking little cabbages are on sale, pick up a few handfuls and give them another try. You might start to feel guilty about how you shunned them in the past.
