One of the first items on my list of freezer recipes to make before Zoey arrived was breakfast burritos. First of all, I love breakfast burritos. It’s the one thing I crave after a late night, or if I want to treat myself before work, or if it’s cold outside in the morning. Really, any excuse I can make to have one, I will.

The second reason I wanted to make them for Zoey’s arrival was because they are the ideal food to eat if you are carrying around a newborn. You can eat them one handed, wrapped in a paper towel, and not have to worry about needing a fork or sitting down to eat. Honestly, who has time to sit down and eat a proper breakfast anymore newborn or not?

A one-handed option is also ideal for those who just need to grab something quickly in the morning and zip out the door. These Make Ahead Freezer Breakfast Burritos are quick and easy to heat up so you can take one with you when you leave in the morning.

To freeze these bad boys, I highly recommend you individually wrap each one in Saran wrap and freeze them flat on a cookie sheet. Then you can put them all together in a plastic bag. Make sure you write the date you made them, how to reheat, and what they they are on the plastic bag, otherwise you might end up with some mystery freezer foods.

The recipe I detail here is what I prefer in my breakfast burritos, but you can really make it your own. If you are opting for the more healthy route, definitely go with the turkey bacon. Rob scoffs at me when I use it, but I am not picky about the difference. A quality whole wheat tortilla is best also. Just be sure to check the sugar labels as tortillas are one of those sneaky, sugar-added foods.
